  • 1 cup crushed pineapple do not drain!
  • 1 8 oz Cool Whip I used lite
  • 10 oz colored miniature marshmallows
  • 1 cup shredded sweetened coconut
  • ½ cup chopped nuts your favorite, optional

Method
 

  1. In a large mixing bowl, combine the vanilla instant pudding mix and the crushed pineapple. Use a spatula or whisk to mix them thoroughly. You want the pudding mix to dissolve completely, creating a smooth, creamy base.
  2. Next, fold in the Cool Whip gently. Be careful not to over-mix; you want to maintain that light, airy texture. The combination of the pudding and the whipped topping will create a fluffy consistency.
  3. Add the miniature marshmallows to the mixture. Stir them in lightly. They will add sweet bursts of flavor throughout the fluff.
