  • 1/2 cup Water
  • 1/2 teaspoon Active dry yeast
  • 1/2 teaspoon Honey
  • 1 1/2 cups All-purpose flour
  • 3/4 teaspoon Salt
  • 1 tablespoon Cornmeal for dusting
  • 2 ounces Goat cheese at room temperature
  • Olive oil
  • Red pepper flakes
  • Pinch Salt
  • 3/4 pound Asparagus about 6 to 7 spears
  • Juice from 1/2 lemon
  • 1/2 cup Shredded mozzarella
  • 1/4 cup Shredded parmesan

Method
 

  1. Preheat your oven to 500 degrees F or as hot as your oven goes.
  2. In a measuring cup, combine lukewarm water, active dry yeast, and honey. Let it sit for 5 minutes until frothy.
  3. In a mixing bowl, add all-purpose flour and salt. Mix briefly.
  4. Pour the yeast mixture into the flour mixture and mix on low until a ball of dough forms.
  5. Shape the dough into a ball, divide into two, and let rise for 10 to 15 minutes.
  6. Prepare the toppings by mixing goat cheese, olive oil, red pepper flakes, and salt.
  7. Toss asparagus with olive oil, lemon juice, and salt.
  8. Dust a baking sheet with cornmeal and flatten the dough into a ten-inch round.
  9. Spread the goat cheese mixture on the dough, leaving a 1-inch border.
  10. Sprinkle mozzarella and parmesan on top, then add the shaved asparagus.
  11. Bake for 10 to 12 minutes until golden brown and bubbly.
