Ingredients
  

  • 1/2 package curly lasagna noodles About 10 noodles
  • 2 cans stewed tomatoes 14 oz each
  • 1 can tomato sauce 8 oz
  • 1 container part-skim ricotta cheese 15 oz
  • 1 1/2 cups part-skim mozzarella cheese 6 oz, shredded
  • 3 Tbsp freshly grated Parmesan cheese
  • 1/2 tsp coarsely ground black pepper
  • 1/4 cup chopped fresh basil
  • 2 tsp olive oil
  • 1 small onion chopped
  • 1 small zucchini diced
  • 1 small tomato diced
  • 1 Tbsp capers drained and chopped

Method
 

  1. Preheat your oven to 375 degrees F. This is the perfect temperature to achieve a beautifully baked dish.
  2. Prepare the lasagna noodles according to the package directions. Make sure to cook them just until al dente, as they will continue to cook in the oven.
  3. Once cooked, drain the noodles and rinse them under cold running water. This step helps prevent them from sticking together. Return the noodles to a pot filled with cold water to keep them moist.
  4. In a 3-quart glass or ceramic baking dish, combine the stewed tomatoes and tomato sauce. Use the back of a spoon to break up the tomatoes and create a chunky sauce base.
  5. Now, let’s prepare the filling! In a large bowl, mix together the ricotta cheese, mozzarella cheese, Parmesan cheese, and black pepper. Stir in 3 tablespoons of the chopped basil until well combined.
  6. Take a noodle, and spread about 2-3 tablespoons of the cheese mixture along its length. Roll it up tightly, then place it cut-side down in the sauce in the baking dish. Repeat this process until all noodles are filled and arranged neatly.
  7. Cover the baking dish loosely with foil. This will help the rolls stay moist while they bake. Place it in the preheated oven and bake for about 35 to 40 minutes.
  8. While the rolls are baking, prepare the topping. In a nonstick skillet, heat the olive oil over medium heat and sauté the chopped onion until it’s tender and translucent.
  9. Add the diced zucchini and cook until it becomes tender, then incorporate the diced tomato and capers. Stir in the remaining tablespoon of basil and mix everything thoroughly.
  10. Once the lasagna rolls are done baking, spoon the sautéed vegetable mixture over the top. This adds freshness and a vibrant touch to your dish. Serve and enjoy your delicious creation!

Notes

There's always room to get creative! Store leftovers in an airtight container in the fridge for up to three days. These roll-ups freeze beautifully! Prepare them up to the baking stage, then wrap tightly and freeze for up to three months.
