- Start by making the sauce. In a saucepan, combine the sweet chili sauce, rice vinegar, lite canned coconut milk, brown sugar, garlic, ginger, creamy peanut butter, soy sauce, and the juice of one lime. Whisk everything together until well combined. Turn the heat to medium-low. You’ll want to cook this mixture for about five to six minutes until it thickens slightly, stirring occasionally. The smell should be heavenly as the flavors meld together.
- In another skillet, heat the vegetable oil over medium-high heat. While it’s heating, season the beef sirloin with salt and pepper. Once the oil is hot, carefully add the beef to the skillet. The beef should sizzle as it hits the pan. Sear the beef for about three to four minutes, or until it’s just cooked through, ensuring not to overcook it. Remember, we want it tender and juicy!
- After searing the beef, remove it from the skillet and set it aside. Drizzle some of the peanut sauce from the saucepan over the beef. Toss it gently to coat. You want every piece to be beautifully sauced.
- Now it’s time to assemble the bowls. In a large bowl, combine the spiralized zucchini and carrot with the sliced red pepper and cooked brown rice. This colorful mix will be the base for your bowl.
- Top the vegetable and rice mixture with the seared beef. Drizzle more of that luscious peanut sauce over the top, ensuring it’s well covered. This is where it gets exciting; you can toss everything together or leave it layered for presentation.
- To finish, sprinkle fresh basil and cilantro over the top. These herbs not only look beautiful but also enhance the flavors immensely. Squeeze some additional lime juice for a bright finish and give it a final garnish with chopped peanuts.
