Ingredients

  • 1.5 pounds salmon fillet skin removed
  • 0.5 cup teriyaki sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • to taste salt
  • to taste pepper
  • 2 ripe avocados diced
  • 1 large cucumber sliced in half moons
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • to taste salt
  • to taste pepper
  • 0.33 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 teaspoon lemon juice or lime juice
  • to taste salt
  • 2 cups cooked rice preferably Jasmine or Basmati
  • sesame seeds for garnish

Equipment

  • Air Fryer

Method

  1. Cut the salmon into bite-sized cubes. In a mixing bowl, combine teriyaki sauce, sesame oil, cornstarch, salt, and pepper. Whisk until smooth. Add salmon cubes into the bowl and gently mix until they're fully coated. Marinate for at least 20 minutes.
  2. Preheat your air fryer to 400°F (200°C). Place the salmon bites in a single layer in the air fryer basket, ensuring they aren't touching. You may need to cook them in batches. Cook for 7-10 minutes, turning them halfway, or until the salmon is cooked through and has a slightly crispy exterior.
  3. In a mixing bowl, combine diced avocados, sliced cucumber, rice vinegar, sesame oil, salt, and pepper. Toss gently until everything is well-mixed. Set aside.
  4. In a small bowl, combine mayonnaise, sriracha sauce, lemon juice, and salt. Mix well.
  5. Serve cooked rice on each plate, followed by a portion of the air-fried salmon bites. Add a scoop of avocado cucumber salad beside the salmon. Drizzle the sriracha mayo over the salmon or serve on the side. Garnish with sesame seeds.

Notes

  • Salmon Selection: Opt for fresh, wild-caught salmon for the best flavor and texture. If using frozen salmon, ensure it’s fully thawed before marinating.
  • Marinating Time: For the best flavor, marinate the salmon for at least 20 minutes. If you have time, extending it to 30 minutes can deepen the flavors even more.
  • Cooking Options: If you don’t have an air fryer, the salmon bites can be baked in the oven at 425°F (220°C) for 12-15 minutes.
  • Salad Freshness: Prepare the avocado cucumber salad just before serving to maintain its crispness and prevent the avocado from browning.
  • Serving Suggestion: For an extra touch, garnish with sliced green onions or a sprinkle of red pepper flakes for a bit of heat.
  • Storage Tips: Store any leftovers in an airtight container in the refrigerator for up to 3 days. It’s best enjoyed fresh, as the texture may change upon reheating.
