- Start by heating a large skillet over medium heat. Add the ground beef to the pan, breaking it up with a spatula. Cook the beef until it’s browned and no longer pink, about 5 to 7 minutes. Drain off any excess fat to keep your Taco Party Toasts from becoming greasy.
- Next, sprinkle the taco seasoning over the cooked beef. Pour in the can of diced tomatoes and green chiles (do not drain). Stir everything together and let it cook for another 2 to 3 minutes. You want the mixture to be heated through and the flavors to meld.
- Once the beef mixture is done, remove the skillet from the heat. Add the cubed Velveeta cheese to the beef mixture. Stir until the cheese is completely melted and combined with the meat, creating a luscious, cheesy filling.
- Now, take your cocktail rye bread slices and lay them out on a baking sheet. Spread a generous amount of the cheesy taco mixture on each slice, ensuring it’s evenly distributed.
- Preheat your oven's broiler while you prepare the baking sheet. Once the broiler is ready, place the baking sheet in the oven. Broil the toasts for 2 to 3 minutes, or until the cheese is bubbly and slightly golden. Keep a close eye on them to prevent burning.
