  • 3 tbsp chia seeds
  • 1 teaspoon vanilla paste or extract
  • cup water
  • 1 tsp lemon juice
  • 1 tablespoon powdered sweetener or more if needed

Method
 

  1. Start by washing your raspberries thoroughly. It’s essential to remove any dirt or debris. Once clean, place the raspberries in a bowl and use a fork to mash them gently. You want to break them down, releasing their juices, but don’t worry about making them smooth.
  2. Next, in a separate bowl, combine the mashed raspberries with chia seeds, vanilla paste, water, lemon juice, and your choice of powdered sweetener. Stir everything together until well combined.
  3. Once mixed, transfer the mixture into a clean jar or bowl. This is where the magic happens! Allow the mixture to sit in the refrigerator for at least a few hours, but overnight is best. This waiting time allows the chia seeds to absorb liquid and thicken the jam.
  4. If you’re in a hurry, you can wait just 20 minutes and see how the jam thickens. The chia seeds will start to swell and create a lovely jam consistency.
  5. Once thickened to your liking, give the jam a taste. You can adjust the sweetness by adding more sweetener if needed. Mix again, and your Sugar Free Raspberry Jam is ready!
  6. To store, transfer the jam into an airtight jar and keep it in the fridge. It’ll last for about a week, but it’s so delicious, I doubt it will last that long!
