Ingredients
  

  • 2 ea Eggs
  • ½ cup Sugar
  • 1 tbsp Vanilla
  • 8 tbsp Butter melted and cooled slightly
  • 1 cup Flour
  • 1 tsp Baking Powder
  • 1/8 tsp Salt
  • ½ cup Milk

Method
 

  1. In a large bowl, whisk the eggs and sugar till blended.
  2. Add the vanilla and melted butter and whisk till combined.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Add half of this dry mixture to the egg mixture and whisk until just combined.
  5. Add the remainder of the dry ingredient and whisk until combined, but do not overmix.
  6. Preheat your Belgium waffle maker (grease before heating if it's not non-stick).
  7. Add as much batter as needed to make a waffle and cook till done.
  8. Repeat two more times or till all the batter is gone.
  9. Cool on a rack before assembling.
  10. Mix the sliced strawberries with the 2 tablespoons of sugar and set aside.
  11. Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  12. Place one waffle on a serving plate. Top with ⅓ of the whipped cream, then arrange ⅓ of the berries over the cream. Repeat two more times.
  13. Serve within a few hours for the best results.
