Preheat your oven to 375 degrees Fahrenheit and line 2 baking sheets with parchment paper.
In a large bowl, add the strawberry cake mix, melted salted butter, and eggs. Using a hand mixer, beat the mixture on medium speed until completely combined.
Scoop the dough into 3-tablespoon portions using a medium cookie scoop. Roll each portion into uniform balls.
Roll the balls first in granulated sugar, then in powdered sugar.
Place the cookies on the prepared baking sheets, leaving 2 inches between each.
Bake for 8 to 10 minutes until the tops crack and the edges are set.
Let the cookies cool on the baking sheet for at least 3 minutes before transferring to a cooling rack.
