  • 2 ounces Vermicelli Rice Noodles
  • 1 cup Butter Lettuce Torn
  • 1 cup Red Cabbage Thinly Sliced
  • 2 carrots Carrots Peeled and sliced with a julienne peeler
  • 2 Persian cucumbers Persian Cucumbers Thinly Sliced
  • 2 green onions Green Onions Thinly Sliced
  • 1/3 cup Cilantro Chopped
  • 1 red bell pepper Red Bell Pepper Thinly Sliced
  • 12 wrappers Vietnamese Spring Roll Wrappers
  • 1 small bowl Bowl of Water

Method
 

  1. In a small bowl, whisk together the ingredients for the peanut sauce: creamy natural peanut butter, rice vinegar, lime juice, soy sauce, maple syrup, toasted sesame oil, and water. Start with the peanut butter and add the liquids slowly to ensure smoothness. Set this delicious sauce aside.
  2. Next, cook the vermicelli rice noodles according to the package instructions. This usually involves boiling them briefly until they're tender. Once cooked, drain the noodles and rinse them under cold water to stop the cooking process.
  3. To prepare for rolling, gather your ingredients. Make sure all your fillings, including butter lettuce, red cabbage, carrots, Persian cucumbers, green onions, cilantro, and red bell pepper, are prepped and within reach.
  4. Take a Vietnamese spring roll wrapper and dip it into a small bowl of water. Allow it to soak for just a few seconds until it becomes pliable. Lay the wrapper flat on a clean surface.
  5. Start layering your ingredients in the middle of the wrapper. Add a few pieces of butter lettuce, followed by a small amount of vermicelli noodles, shredded red cabbage, carrots, cucumbers, green onions, and a sprinkle of cilantro. Be careful not to overfill; you want to be able to roll it easily!
  6. Now comes the fun part! Fold the sides of the wrapper inward, then carefully roll it up tightly from the bottom, similar to rolling a burrito. Make sure to tuck the fillings in as you go to create a secure roll.
  7. Repeat this process with the remaining wrappers and fillings. You should end up with a beautiful platter of fresh spring rolls ready to be dipped into your peanut sauce.
