  • 2 pounds Sweet Potatoes Cut into 2-inch pieces.
  • 2 tablespoons Olive Oil Or canola oil.
  • 1 teaspoon Salt
  • 3/4 teaspoon Ground Pepper
  • 2 tablespoons Garlic Finely chopped, approximately 8 cloves.
  • 2 tablespoons Fresh Parsley Chopped.

Method
 

  1. Preheat the oven to 220°C | 425°F.
  2. Lightly spray a baking sheet or tray with cooking oil spray.
  3. Arrange the sweet potatoes on the sheet in one layer, ensuring they aren't overcrowded.
  4. Add the olive oil, salt, ground pepper, and garlic on top. Toss until well coated.
  5. Roast in the oven for 45 to 55 minutes, flipping occasionally until fork-tender.
  6. Remove from the oven and season with extra salt and pepper to taste.
  7. Sprinkle with fresh parsley before serving.
  8. Serve immediately!
