  • 3 pounds ribeye roast
  • 3 cloves garlic crushed
  • 2 tablespoons butter melted
  • 2 tablespoons salt
  • 1 tablespoon brown sugar
  • 2 tablespoons paprika
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Method
 

  1. Preheat your oven to 500°F (250°C). This high temperature will help create a beautiful sear on the outside of the roast.
  2. In a small bowl, combine melted butter and crushed garlic. This mixture will infuse the roast with flavor as it cooks.
  3. Brush the meat with the garlic butter mixture on all sides, ensuring it’s fully coated. This not only adds flavor but also helps the seasonings adhere to the roast.
  4. In another bowl, mix together salt, brown sugar, paprika, black pepper, and Italian seasoning. This rub will create a flavorful crust on the meat.
  5. Rub the seasoning mixture all over the roast, pressing firmly to help it stick. You want to ensure each bite is packed with flavor!
  6. Place the roast fat side up on a rack in a roasting pan. This allows for even cooking and browning.
  7. Cook the roast in the preheated oven for 15 minutes. This initial high heat helps to develop a nice crust.
  8. After 15 minutes, reduce the oven temperature to 350°F (180°C) and continue cooking the roast for about 1 hour. You’ll want to use a meat thermometer to check the internal temperature.
  9. If the roast hasn’t reached 115-120°F, continue cooking until it does. It’s important to monitor closely to achieve your desired doneness.
  10. Once cooked, remove the roast from the oven and let it rest for 20 minutes, covered loosely with foil. This resting period allows the juices to redistribute throughout the meat.
