  • 1/2 cup White granulated sugar
  • 1/4 cup Light brown sugar
  • 1/4 cup Dark brown sugar
  • 15 ounces Pure pumpkin puree
  • 1 cup Heavy whipping cream
  • 3 teaspoons Pure vanilla extract
  • 2 teaspoons Ground cinnamon
  • 1/2 teaspoon Ground ginger
  • 1/4 teaspoon Ground cloves
  • 1/4 teaspoon Nutmeg
  • 3/4 teaspoon Salt
  • 1 9-inch Pie crust

Method
 

  1. Preheat your oven to 425°F (220°C) and prepare your pie crust by pricking the base a few times with a fork.
  2. In a mixing bowl, whisk together the eggs and sugars until smooth.
  3. Mix in the pumpkin puree, cream, vanilla, and spices until well combined.
  4. Pour the mixture into the prepared pie crust and smooth the top.
  5. Bake the pie at 425°F for 15 minutes, then lower the temperature to 350°F (175°C) and bake for 50 to 55 minutes.
  6. Check for doneness with a knife, and ensure the center has a slight jiggle.
  7. Let the pie cool on a wire rack for 2 hours before serving.

Notes

  • Roasting: Halve a small pumpkin and roast it at 350°F until tender.
  • Steaming: Chop the pumpkin into chunks and steam until fork-tender.
