Ingredients
  

  • 1 whole fresh pineapple chopped
  • 1 lb fresh strawberries chopped
  • 1.5 cups green seedless grapes
  • 4 whole mandarin oranges peeled, segmented
  • 3 whole kiwis sliced
  • 6 oz fresh blueberries
  • 2 whole ripe bananas sliced
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1.5 teaspoons lime zest (zest of one lime)
  • 1 teaspoon poppy seeds (optional)

Method
 

  1. Begin by washing all your fruits thoroughly. Make sure your pineapple, strawberries, and grapes are fresh and clean. This is essential for a refreshing taste. I often like to rinse them under cold water for a few minutes.
  2. Next, chop the pineapple into bite-sized pieces. The sweetness of the pineapple sets a wonderful base for the salad. I usually slice it down the center, remove the core, and chop the flesh into small chunks.
  3. Now, take your strawberries and remove the green tops. Slice them into quarters or halves, depending on their size. Their bright color and juicy flavor will add a wonderful contrast to the salad.
  4. Next, wash and halve the grapes. If they’re really small, you can leave them whole. Their juicy burst is always a favorite among kids and adults alike.
  5. Peel the mandarin oranges (or clementines) and separate them into segments. If you can find seedless ones, that’s perfect. I love to use ones that are easy to peel.
  6. For the kiwis, peel the skin off and slice them into rounds or half-moons. Their tartness provides a beautiful contrast to the sweetness of the other fruits.
  7. Now, toss all the prepared fruits into a large mixing bowl. Be gentle to avoid bruising the fruits, especially the bananas.
  8. For the dressing, take a small bowl and whisk together the honey, lime juice, and lime zest. This dressing is key to enhancing the flavors of the fruits. I suggest doing this step about 30 minutes to 2 hours before serving.
  9. Pour the dressing over the fruit mixture and gently toss everything together. Ensure that all fruits are coated with the dressing. It’s the magic that brings everything together!
  10. Finally, add the bananas just before serving to prevent them from browning. You can refrigerate the salad for at least 30 minutes to let the flavors meld. Just remember, if you let it sit too long, the fruits may release too much juice, but that’s still delicious!

Notes

Store leftover salad in an airtight container, but be sure to remove the bananas beforehand to prevent them from browning.
