Ingredients
  

  • 1/4 cup salted butter
  • 1 cup peanut butter chunky or creamy
  • 1 tsp vanilla extract
  • 1 1/2 cups powdered sugar
  • 1 1/2 cups Rice Krispies cereal optional
  • 1 cup melting chocolates or chocolate chips
  • 1 tsp coconut oil if needed
  • 1 cup sprinkles for garnish

Method
 

  1. In a large bowl, melt the butter and peanut butter together in the microwave for about one minute. Stir the mixture thoroughly to ensure it’s well combined and smooth.
  2. Add the vanilla extract and powdered sugar to the peanut butter mixture. As you mix, you may notice it becoming thick. This is normal, so don’t worry! If you choose to include the Rice Krispies, fold them in at this stage.
  3. Once combined, your mixture should hold together nicely when you form it into shapes. This part is perfect for the kids to help out! Using a large cookie scoop, portion out the mixture and roll it into egg shapes. You should have about ten larger eggs or twenty-four smaller ones, depending on the scoop size.
  4. Place the shaped eggs onto a baking sheet lined with parchment paper. This will prevent them from sticking. Once all the eggs are formed, put the tray in the freezer for about ten minutes to firm up.
  5. While the eggs chill, melt the chocolate. You can do this in the microwave, using low heat for about 30 seconds at a time, stirring in between until it’s completely melted and smooth. If the chocolate appears too thick, add a little coconut oil to thin it out.
  6. Retrieve the chilled eggs from the freezer. Using a fork, dip each egg into the melted chocolate, ensuring it’s fully coated. Lift it out carefully, allowing excess chocolate to drip back into the bowl.
  7. Place the coated eggs back onto the parchment paper. If you want, sprinkle them with your desired toppings while the chocolate is still soft.
  8. Repeat this process until all eggs are coated. After that, refrigerate them for about five minutes, or until the chocolate hardens.
  9. Once hardened, your Peanut Butter Eggs are ready to be enjoyed! You can serve them right away, or they can be stored in the fridge for up to five days.
