- In a large mixing bowl, combine the softened unsalted butter, cream cheese, and peanut butter. Using either a hand mixer or a stand mixer, blend these ingredients together until they are smooth and well combined.
- Once your mixture is smooth, add the vanilla extract and continue mixing until thoroughly blended.
- Gradually add the powdered sugar, about half a cup at a time, mixing well after each addition.
- Now, it's time to fold in the peanut butter chips. Use a spatula to gently mix them in.
- Using your hands, shape the mixture into a ball. Wrap it tightly in plastic wrap to keep its shape.
- Place the wrapped ball into a bowl to support it and chill in the refrigerator for at least two hours or overnight.
- When you're ready to serve, take the cheese ball out of the fridge. Let it sit at room temperature for about thirty minutes.
- Spread the mini chocolate chips out on a plate. Unwrap the cheese ball and roll it in the chocolate chips.
- Transfer the coated cheese ball to a serving platter. It’s best served at room temperature, so if you chilled it, let it sit out for a bit before serving.
