Ingredients
  

  • 1 1/4 cups white whole wheat flour
  • 1/2 cup oats
  • 3 tbsp sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup peaches, diced
  • 2 large eggs
  • 1/2 cup coconut oil, melted
  • 1/2 cup Greek yogurt, plain
  • 1 tsp vanilla

Method
 

  1. Combine all dry ingredients: flour, oats, sugar, baking powder, salt, baking soda, cinnamon, and nutmeg in a large mixing bowl and whisk together.
  2. In a blender, combine the wet ingredients: peaches, eggs, coconut oil, Greek yogurt, and vanilla. Blend until smooth.
  3. Pour the blended mixture into the bowl with the dry ingredients and gently fold until just combined.
  4. Fold in any reserved diced peaches for added texture.
  5. Pour the batter into a greased loaf pan, smoothing the top.
  6. Preheat your oven to 350 degrees Fahrenheit. Bake for 45 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven, cool in the pan for 10 minutes, then transfer to a wire rack.
