Ingredients

  • 2 cups Walnuts
  • 1/2 cup Pumpkin Seeds
  • 1/2 cup Unsweetened Shredded Coconut
  • 1/3 cup Coconut Butter
  • 3 tablespoons Almond Milk
  • 5 large Medjool Dates pitted
  • 1/3 cup Raisins
  • 1.5 teaspoons Ground Cinnamon
  • 2 teaspoons Pure Vanilla Extract
  • 1/8 teaspoon Sea Salt

Equipment

  • Mixing Bowl
  • Food Processor

Method

  1. Start by gathering all your ingredients. You’ll need to have your walnuts, pumpkin seeds, unsweetened shredded coconut, coconut butter, almond milk, medjool dates, raisins, ground cinnamon, pure vanilla extract, and sea salt ready on the counter. This makes the process effortless and enjoyable.
  2. Next, place all the ingredients into a food processor. Make sure to break up the medjool dates a bit before adding them, as this will help them blend more easily.
  3. Turn the food processor on and blend until the mixture becomes a thick, sticky dough. You may need to stop and scrape down the sides with a rubber spatula to ensure everything gets mixed thoroughly.
  4. If the dough seems crumbly and doesn’t stick together, you can add 1 to 2 tablespoons of almond milk to help it come together. The goal is to have a consistency that holds its shape when you form it into balls.
  5. Once you have your sticky dough, transfer it into a sealable container. This is an essential step, as it allows the flavors to meld together as it chills.
  6. Refrigerate the mixture for at least 2 hours. This chill time helps solidify the bites, making them easier to shape.
  7. After chilling, take the mixture out of the fridge. Using your hands, form small balls from the mixture, about the size of a tablespoon. Be sure to squeeze tightly to ensure they hold their shape.
  8. Store the formed energy bites in a zip-lock bag or an airtight container. They can be kept in the fridge for a week or in the freezer for longer storage.
  9. Enjoy your Paleo Oatmeal Cookie Energy Bites as a quick snack or a healthy treat any time of day. They’re perfect for on-the-go munching or as a post-workout boost!
