- Start by gathering all your ingredients. You’ll need to have your walnuts, pumpkin seeds, unsweetened shredded coconut, coconut butter, almond milk, medjool dates, raisins, ground cinnamon, pure vanilla extract, and sea salt ready on the counter. This makes the process effortless and enjoyable.
- Next, place all the ingredients into a food processor. Make sure to break up the medjool dates a bit before adding them, as this will help them blend more easily.
- Turn the food processor on and blend until the mixture becomes a thick, sticky dough. You may need to stop and scrape down the sides with a rubber spatula to ensure everything gets mixed thoroughly.
- If the dough seems crumbly and doesn’t stick together, you can add 1 to 2 tablespoons of almond milk to help it come together. The goal is to have a consistency that holds its shape when you form it into balls.

- Store the formed energy bites in a zip-lock bag or an airtight container. They can be kept in the fridge for a week or in the freezer for longer storage.
