  • 1 28-oz can whole peeled tomatoes drained
  • 2 tablespoons extra-virgin olive oil
  • 2 large garlic cloves minced
  • 2 tablespoons finely grated Parmigiano-Reggiano cheese
  • 1 tablespoon sugar

Method
 

  1. Put tomatoes in food processor and pulse 4 or 5 times. Pour tomatoes in a bowl, add remaining ingredients and let rest at room temperature for 1 hour. Cover and refrigerate for up to 3 days.
