Ingredients
  

  • 1 cup All-Purpose Flour
  • 3 tbsp Powdered Sugar
  • 1 tbsp Lemon Zest zest from 1 lemon
  • 6 tbsp Butter melted
  • 1 cup Granulated Sugar
  • 2 tbsp Lemon Zest zest from 2 lemons
  • 3 large Eggs room temperature
  • 1/3 cup Fresh Lemon Juice from your zested lemons
  • 1 tbsp All-Purpose Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt

Method
 

  1. Lightly grease a 9x9 inch microwave-safe baking dish or line with parchment paper.
  2. Whisk 1 cup of all-purpose flour, 3 tablespoons of powdered sugar, and 1 tablespoon of lemon zest together.
  3. Stir in 6 tablespoons of melted butter.
  4. Press crust into prepared dish.
  5. Microwave for three minutes at 80% power. Check to make sure the crust is firm.
  6. Set aside.
  7. Beat 1 cup of granulated sugar, 2 tablespoons of lemon zest, 3 large eggs, and 1/3 cup of fresh lemon juice together.
  8. Beat in 1 tablespoon of all-purpose flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt.
  9. Pour the filling over the crust and microwave for three minutes at 80% power.
  10. Let cool completely and refrigerate for several hours or overnight.
  11. Cut into squares, dust with powdered sugar, and sprinkle with additional lemon zest if desired.
