  • 1 Tablespoon butter softened
  • 2 slices thick hearty bread
  • 1 teaspoon ketchup
  • 1 slice cheddar cheese
  • ½ teaspoon prepared yellow mustard

Method
 

  1. Start by placing a slice of meatloaf on a microwave-safe plate. Heat it up in the microwave for thirty seconds at a time until it’s heated through.
  2. While the meatloaf warms up, grab your bread. Brush one side of each slice with butter.
  3. Now, take the slice of bread that you’ve buttered and spread a thin layer of ketchup on the unbuttered side. Place it butter-side down into a non-stick skillet over medium heat.
  4. Next, layer on your ingredients. Start with a slice of cheddar cheese, followed by the warmed meatloaf, and a drizzle of yellow mustard for that kick.
  5. Now, take the other slice of bread and place it on top, butter-side up.
  6. Cook the sandwich until the bottom is lightly browned, which should take about four minutes.
  7. Once the bottom is browned, carefully flip the sandwich over. Continue to cook for an additional three to four minutes.
  8. When both sides are beautifully browned, remove the sandwich from the skillet. Let it rest for a minute before slicing it in half.
