Ingredients

  • 1⅓ cups all-purpose flour
  • 1 cup quick cooking oats
  • cup granulated white sugar
  • 1 tablespoon baking powder
  • teaspoons ground cinnamon
  • ½ cup milk
  • cup butter, melted
  • ¼ cup maple syrup
  • 1 large egg, slightly beaten
  • 2 cups chopped, peeled apples (I use Granny Smith)
  • 12 whole pecan halves
  • cup powdered sugar
  • 2 tablespoons maple syrup

Equipment

  • Frying pan
  • Wooden Spoon
  • Oven
  • Chef's Knife
  • Whisk
  • Mixing Bowl
  • Peeler
  • Baking Sheet

Method

  1. Preheat your oven to 400°F. Spray a 12-cup muffin tin with nonstick spray or line with paper liners to ensure the muffins come out easily.
  2. In a large bowl, whisk together the flour, oats, sugar, baking powder, and cinnamon. This dry mixture forms the base of your muffins and creates a cozy blend of flavors.
  3. In a separate small bowl, whisk together the milk, butter, maple syrup, and egg. This wet mixture will be combined with the dry ingredients, adding moisture and binding them together.
  4. Gently stir the wet ingredients into the dry mixture until just moistened. Be careful not to overmix; it’s okay if there are a few lumps!
  5. Fold in the chopped apples. The apples will give your muffins a wonderful texture and sweet flavor.
  6. Using an ice cream scoop, fill the prepared muffin cups about ¾ full. This will give them room to rise while baking. Top each filled cup with a pecan half for added crunch and decoration.
  7. Place the muffin tin in the preheated oven and bake for 18 to 20 minutes. You’ll know they’re done when they’re golden brown and a toothpick inserted into the center comes out clean.
  8. Once baked, let the muffins cool in the pan for 10 minutes before transferring them to a wire rack. This cooling time allows them to set up perfectly.
  9. In a small bowl, mix the powdered sugar with the additional maple syrup to create a drizzle. Adjust the consistency by adding more syrup or sugar as needed; you want it pourable but not too thin.
  10. Drizzle the sweet maple mixture over the cooled muffins, creating a beautiful and tasty finish. Enjoy your homemade Maple Drizzled Apple Muffins!
