Ingredients
  

  • 1 cup red bell pepper, finely chopped
  • 2 pieces green onions, chopped
  • 2 teaspoons fresh ginger root, minced
  • 1 cup water chestnuts, chopped
  • 1 head Boston Bib lettuce, or romaine lettuce leaves
  • 1 tablespoon olive oil
  • Sriracha hot sauce, for topping
  • 1 pound ground chicken, or turkey
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 5 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 2 teaspoons granulated sugar
  • 2 teaspoons sesame oil
  • 2 tablespoons hoisin sauce
  • 1 teaspoon cornstarch

Method
 

  1. Start by placing the marinade ingredients in a bowl and mixing them well. Once combined, add the chicken and stir to ensure everything is coated. Set this aside to let the flavors meld.
  2. In another bowl, combine all of the sauce ingredients and mix until smooth. This sauce will be the flavor powerhouse of your Lettuce Wraps.
  3. Heat 1 tablespoon of olive oil in a large skillet or wok over medium heat. Once hot, add the chicken mixture and stir-fry for about 2 to 3 minutes, or until the chicken is cooked through and no longer pink.
  4. Next, push the chicken to the side of the pan. Add the chopped red bell pepper, minced ginger, chopped green onions, and water chestnuts. Stir-fry this medley for 1 to 2 minutes until the vegetables are tender yet crisp.
  5. Now, pour in the sauce and continue to cook over medium heat, stirring as needed until the mixture thickens. You’ll know it’s ready when the sauce clings nicely to the ingredients.
  6. Finally, serve the mixture in crisp lettuce cups, and don’t forget to top it off with a drizzle of Sriracha hot sauce for an extra kick if desired!

Notes

  • Protein: The chicken can be substituted for ground turkey or air fryer tofu, if preferred.
  • Vegetables: Feel free to throw in some more of your favorite veggies.
