Ingredients
  

  • 2 1/3 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 1 large Egg
  • Zest of 2 Lemons
  • 2 tablespoons Fresh Lemon Juice
  • 2 teaspoons Vanilla Extract
  • 2 teaspoons Poppy Seeds
  • 3-6 drops Yellow Food Coloring optional

Method
 

  1. Preheat your oven to 350 degrees F. Line your baking sheets with parchment paper.
  2. In a medium bowl, mix the all-purpose flour, baking powder, baking soda, and salt.
  3. Cream together the butter and sugar until light and fluffy.
  4. Add the egg, lemon zest, lemon juice, and vanilla extract to the mixture.
  5. Slowly incorporate the dry ingredients into the wet ingredients until just combined.
  6. Fold in poppy seeds and yellow food coloring, if using.
  7. Scoop the dough onto baking sheets, spacing them 2 inches apart.
  8. Sprinkle extra poppy seeds on top.
  9. Bake for 10 to 12 minutes until edges are golden.
  10. Cool on sheets for 5 minutes before transferring to a wire rack.
  11. Store in an airtight container at room temperature for up to a week.

Notes

  • Tip: You do not need to add lemon extract here! The lemon flavor really comes from the lemon zest, so don’t skip it.
  • Tip: The fresh lemon juice also adds more lemon flavor and a hint of tangy flavor!
