- Preheat your oven to 400 degrees F. It’s essential to have your oven hot before placing the puffs inside, ensuring they puff up beautifully.
- Prepare a baking sheet by greasing it lightly or lining it with parchment paper. This will prevent sticking and make cleanup easier.
- Begin by peeling, coring, and slicing the apples. Aim for uniform slices to ensure even cooking. Place them in a saucepan with 1/2 cup of water.
- Stew the apple slices over medium heat until they become tender. This usually takes around 10 to 15 minutes. Once done, drain the apples, reserving the cooking liquid, which will be used later.
- Allow the apples to cool completely. Once cooled, place the cooked apples in a bowl. This is when you can start adding the flavoring!
- Add in the brown sugar, finely grated lemon rind, and marmalade, mixing everything together until well combined. Taste and adjust with more sugar or lemon if needed. The mixture should be sweet with a hint of tartness.
- On a lightly floured surface, roll out the puff pastry to about 1/8 inch thick. Roll carefully to maintain its flakiness.
- Cut the rolled pastry into squares of about 4 inches each. You should end up with eight squares.
- Divide the apple filling evenly among the squares, placing it in a line down the center of each pastry square. Be careful not to overfill, as you need to be able to seal the edges.
- Using a pastry brush, dampen the edges of the pastry with some of the reserved apple cooking liquid. This will help the pastry to stick together.
- Carefully fold the edges of the pastry over the filling, pinching them together to create a tube shape. Use a fork to seal the edges thoroughly, ensuring the filling doesn't escape during baking.
- Brush the tops of the pastries lightly with more of the reserved cooking liquid and sprinkle with caster sugar for a beautiful finish.
- Using a sharp knife, gently cut a few vents into the top of each pastry. This allows steam to escape while baking, preventing sogginess.
- Place the puffs on the prepared baking sheet and bake in the preheated oven for 20 to 25 minutes or until they are golden brown.
- Serve your Jane Austen Apple Puffs warm, topped with a bit of extra marmalade or candied orange peel for that extra touch of flair!
