Ingredients
  

  • 2 cups chopped rotisserie chicken
  • 1/2 cup shredded carrots peel & grate on large holes of box grater
  • 1/3 cup thinly sliced green onion
  • 1/3 cup finely diced celery 2 ribs
  • 1/3 cup mayo
  • 2 tablespoons sour cream full-fat or light
  • 1 tablespoon honey
  • 2 tablespoons hot sauce (like Frank's)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine all ingredients listed under “Dressing.” Season to taste. I start with 1/4 teaspoon salt and 1/8 teaspoon pepper. Whisk until completely smooth.
  2. Add all the ingredients listed under "Salad" on top. Gently fold with a spatula to combine until salad ingredients are nicely coated in the dressing. Taste and adjust.
  3. Dish it up with your choice: on lettuce leaves, on toasted bread with avocado and lettuce, or toasted mini Naan (my fave!) with avocado and lettuce. Enjoy right away!

Notes

  • Serving suggestions: My favorite way to serve this is on toasted mini naan with avocado and lettuce. It’s also great on toasted wheat bread, in lettuce cups, or with crackers.
  • Storage: Keep in an airtight container in the fridge for up to 3 days. Give it a quick stir before serving. Don’t freeze.
