Ingredients
  

  • 2 large Eggs
  • ½ cup Sunflower Oil
  • 1 tsp Vanilla Extract
  • 150 gms Sugar
  • 300 gms Flour
  • 1 pinch Salt
  • 1 tsp Cinnamon
  • ½ tsp Mixed Spice
  • 1 tbsp Orange Zest
  • 1 ½ tsp Baking Powder
  • 3 tbsp Dried Candied Citrus Peel
  • 150 grams Dried Fruit

Method
 

  1. Beat the eggs, sunflower oil, vanilla, and sugar with an electric mixer until well combined.
  2. Add the flour, salt, cinnamon, mixed spice, orange zest, and baking powder and mix until a sticky dough forms.
  3. Empty the dough onto a floured work surface and knead until smooth and no longer sticky.
  4. Divide the dough into two and roll each half into a log about 30 cm long. Place them on a lined baking tray and chill.
  5. Preheat the oven to 180°C (350°F). Bake the logs for 20 to 30 minutes until golden.
  6. Let cool slightly, then reduce the oven temperature to 100°C (212°F).
  7. Slice the biscotti diagonally and lay them back on the baking sheet.
  8. Bake for an additional 30 minutes until dry and crisp.

Notes

  • Tip 1: Add extra fruit and nuts if you like a lot of bits in your biscotti.
  • Tip 2: Store in an airtight container at room temperature.
  • Tip 3: They can be frozen for up to three months.
  • Tip 4: Re-bake softened biscotti at 150°C (300°F) to regain crispness.
