Method
 

  1. Preheat your oven to 200°C (400°F).
  2. Line a large sheet pan with baking paper.
  3. Pat the chicken dry with paper towels and place on the prepared tray.
  4. Wash and cut the potatoes into bite-sized chunks. Add to the tray.
  5. Slice zucchini into thick rounds. Add with baby carrots to the tray.
  6. Drizzle olive oil over everything and toss well to coat.
  7. Mix together soy sauce, honey, mustard, and cornflour in a small jug or bowl.
  8. Pour the glaze over the chicken and veggies.
  9. Bake for 20 minutes in the hot oven.
  10. Turn chicken and stir veggies. Return to the oven for another 15-20 minutes until cooked through.
  11. If needed, thicken the glaze by baking it separately for a few minutes.
