Ingredients
  

  • 2 tablespoons olive oil
  • 6-8 chicken thighs, breasts, quarters, or legs
  • ¼ cup soy sauce or coconut aminos
  • ½ cup honey
  • 2 cloves minced garlic or ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon ground ginger
  • pinch red pepper flakes, optional for heat
  • chopped fresh parsley, optional

Method
 

  1. Preheat your oven to 375º F. It’s important to have your oven ready so that the chicken cooks evenly.
  2. Drizzle olive oil into a medium skillet set over medium heat. Let the oil heat up for a minute or two, just enough to coat the bottom of the pan.
  3. Add the chicken to the skillet, making sure not to overcrowd it. Cook for about 3 to 5 minutes on each side until they’re beautifully browned. This caramelization adds an incredible depth of flavor to the dish.
  4. While the chicken is browning, mix together the soy sauce, honey, garlic, salt, pepper, ginger, and red pepper flakes in a bowl. The mixture should be well combined to ensure each piece of chicken will be coated in that delicious glaze.
  5. Once the chicken is browned, pour the marinade over it, making sure to coat the pieces thoroughly. This will create that irresistible glaze as they bake.
  6. Carefully transfer the skillet to the preheated oven. Bake the chicken for about 20 minutes, or until it registers 160ºF when checked with an internal thermometer at the thickest part. The cooking time may vary depending on the cut used, so keep an eye on it.
  7. When done, remove the skillet from the oven, and let it rest for a few minutes. The chicken will be juicy, and the glaze will have thickened beautifully.
