  • 6-8 pieces chicken thighs boneless and skinless, about 1 ½ to 1 ¾ pounds
  • 2 pieces red bell peppers
  • 2 pieces green bell peppers
  • ½ cup ketchup
  • cup honey
  • 4 cloves garlic minced
  • ¼ cup soy sauce tamari for gluten-free
  • 1 tablespoon melted butter
  • ¼ teaspoon crushed red pepper optional, more for a kick
  • ½ teaspoon cracked pepper
  • ½ teaspoon sea salt adjust as desired
  • 1 tablespoon sesame seeds optional for garnish

Method
 

  1. Preheat your oven to 425°F.
  2. In a medium bowl, whisk together the ketchup, honey, garlic, soy sauce, cracked pepper, butter, and salt to taste.
  3. Place the chicken thighs into the sauce and toss them gently to coat.
  4. While the chicken sits, remove the stems and seeds from the bell peppers and slice them thinly.
  5. Take a parchment-lined or oiled baking pan and place your sauced chicken thighs onto it.
  6. Toss the sliced bell peppers quickly in the remaining sauce and spread them evenly around the chicken thighs.
  7. Pop the pan into the preheated oven and bake for about 25 to 30 minutes.
  8. When you remove the pan from the oven, you might notice some excess liquid. Feel free to drain that into the sink if desired.
  9. Finally, serve the honey garlic chicken on a bed of rice, making sure to include those roasted bell peppers on the side.
