Take a parchment-lined or oiled baking pan and place your sauced chicken thighs onto it.
Toss the sliced bell peppers quickly in the remaining sauce and spread them evenly around the chicken thighs.
Pop the pan into the preheated oven and bake for about 25 to 30 minutes.
When you remove the pan from the oven, you might notice some excess liquid. Feel free to drain that into the sink if desired.
Finally, serve the honey garlic chicken on a bed of rice, making sure to include those roasted bell peppers on the side.
