Add about 2 inches of vegetable oil to a large skillet and heat over medium-high heat.
In a large bowl, combine the chicken, flour, cornstarch, baking soda, and ice-cold water. Mix well until the chicken is evenly coated.
Carefully place the coated chicken pieces into the hot oil, making sure not to overcrowd the skillet. Fry for about 8 to 10 minutes, flipping halfway through.
Once cooked, drain the fried chicken on paper towels to remove excess oil and keep warm.
In a separate skillet, add the butter, white sugar, soy sauce, and honey. Heat over medium heat, stirring frequently until bubbly.
Let the mixture bubble for about 1 minute before removing it from heat.
Combine the fried chicken with the honey-butter mixture in a large bowl. Stir well to ensure each piece is evenly coated.
Serve Honey Buttered Fried Chicken immediately and watch as everyone digs in with delight.
