  • 3 limes zested and juiced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 teaspoons ground cumin

  1. Start by placing the chicken into the Instant Pot. I usually use boneless and skinless chicken breasts for this recipe because they cook quickly and become tender as they absorb the surrounding flavors.
  2. Next, add the chicken broth to the pot. This will not only keep the chicken moist but also adds a savory depth to the dish.
  3. Now, it’s time to zest and juice the limes. This step is essential as the citrus will infuse the chicken with a refreshing flavor. I simply use a zester followed by a juicer to get every drop out of the limes.
  4. Add the lime juice, zest, kosher salt, ground black pepper, and ground cumin to the pot. Stir everything gently, ensuring the spices are evenly distributed among the chicken.
  5. Close the Instant Pot lid securely. Make sure the valve is set to sealing. This is an important step to ensure the pressure builds up properly.
  6. Set your Instant Pot to manual high pressure for 25 minutes. It’s amazing how quickly it cooks through the chicken, transforming it into a tender masterpiece.
  7. Once the cooking time is complete, allow the pressure to naturally release for about 10 minutes. After that, you can use the quick release to let out any remaining steam.
  8. Carefully open the lid and take a moment to enjoy the wonderful aroma. Use two forks to shred the chicken right in the pot. It should fall apart easily and soak up all those delicious juices.
  9. Now you can serve the shredded chicken over a bed of fresh greens, use it in tacos, or add it to a quesadilla. The possibilities are endless!
