Ingredients
  

  • 2 cups chicken fillet pre-cooked and shredded
  • 1 cup Mexican rice or brown rice, pre-cooked
  • 1 avocado diced
  • 1 cup broccoli florets cooked and chopped
  • 2 tablespoons cilantro chopped
  • 1 cup sharp cheddar cheese reduced-fat, grated
  • 5 whole grain tortillas 8 inch
  • 1 tablespoon extra virgin olive oil

Method
 

  1. In a large mixing bowl, combine the chicken, rice, avocado, broccoli, cilantro, and cheddar cheese. Mix well.
  2. Lay out your tortillas. Spoon filling into the center of each and fold sides over.
  3. Heat olive oil in a skillet over medium-high heat. Place filled wraps seam-side down in the pan.
  4. Cook for 2 to 3 minutes on each side until golden brown and heated through.
  5. Remove from pan, let cool slightly, slice in half, and serve warm.
