Ingredients
  

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic minced
  • 1 pound ground chicken
  • 2 tablespoons taco seasoning
  • 1/4 cup water
  • 8 small corn tortillas
  • 1/2 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro chopped
  • Lime wedges for serving

Method
 

  1. Heat olive oil in a skillet over medium heat. Add diced onion and garlic, sauté until softened, about 3 minutes.
  2. Add ground chicken to the skillet. Cook, breaking it apart with a spatula, until no pink remains, about 7 minutes.
  3. Stir in taco seasoning and water. Reduce heat and simmer until most of the liquid has evaporated, about 5 minutes.
  4. Warm corn tortillas according to package instructions.
  5. Assemble tacos by placing chicken on tortillas, topping with shredded lettuce, diced tomatoes, shredded cheddar cheese, and fresh cilantro. Serve with Lime wedges.
