Ingredients
  

  • 1 cup mayo
  • 2 teaspoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • Salt & pepper to taste
  • 1 pound ground chicken
  • 2 tablespoons mayo for the burger mixture
  • Juice of 1/2 lemon lemon juice
  • 1/2 cup Italian seasoned breadcrumbs
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh chives
  • 1 large clove garlic, minced
  • Salt & pepper to taste
  • Hamburger buns, butter leaf lettuce, tomato, avocado, red onion, etc. optional, to taste

Method
 

  1. Start by stirring the burger sauce ingredients together in a medium bowl. Combine the mayo, lemon juice, Dijon mustard, smoked paprika, and a pinch of salt and pepper. Taste the mixture and adjust the seasoning as needed. The sauce will add an extra layer of flavor to your burgers.
  2. Next, oil and preheat your grill to medium-high heat. This step is crucial for achieving those beautiful grill marks and cooking the burgers evenly.
  3. In a medium-to-large bowl, add the burger ingredients: the ground chicken, mayo, lemon juice, breadcrumbs, oregano, chives, and minced garlic. Using your hands, gently mix everything together. Be careful not to overhandle the mixture, as this can make the patties tough.
  4. Form the mixture into burger patties one by one and place them on a sheet of wax paper. You should be able to make six average-size patties or four larger ones. To ensure even cooking, use your thumb to create a slight depression in the center of each patty.
  5. Now it’s time to cook! Place the burger patties on the preheated grill. Cook until their internal temperature reaches at least 165 degrees Fahrenheit. Depending on the thickness of your patties and the heat of your grill, this will generally take about 5 minutes on the first side and 4 minutes on the second side.
  6. If you want toasted buns, place them on the grill for about 30 seconds after removing the patties. This adds a nice texture and flavor to your burgers.
  7. Finally, assemble your burgers! Spread the prepared sauce onto each bun and add the cooked burger patties. Top with your favorite toppings like lettuce, tomato, avocado, and red onion. Serve immediately and enjoy!
