Ingredients
  

  • 1 wheel brie cheese soft-ripened, cold
  • 2 teaspoons olive oil for brushing
  • 2 tablespoons honey divided
  • 1 cup diced peaches
  • 1/4 cup chopped candied pecans
  • 1 tablespoon chopped fresh mint or basil leaves for garnish
  • to taste flaky sea salt for sprinkling
  • as needed crostini or crackers for serving

Method
 

  1. Preheat grill or grill pan to medium high heat.
  2. Brush the olive oil over both sides of the brie.
  3. Place the brie on the grill and grill for 2 to 3 minutes per side or until the brie feels warm and soft on the inside. When flipping the brie, use a spatula, being careful to not break the brie open. Don't overcook the brie or it will melt out and make a mess.
  4. Transfer the brie from the grill to a platter. Drizzle with 1 tablespoon of honey and top with diced peaches, candied pecans, and mint or basil. Drizzle with the remaining honey and a sprinkle with a little sea salt.
  5. Serve the brie with crostini or crackers.

Notes

  • The brie is best the day it’s made. For optimal taste, enjoy it fresh off the grill.
