  • 4 pieces Boneless skinless chicken breasts trimmed
  • 2 cups chicken broth
  • 2 cups quick cooking rice
  • 8 oz cream cheese softened
  • 8 oz chopped green chilis (2 cans)
  • 1 cup monterey jack cheese shredded
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup chopped cilantro

Method
 

  1. Preheat your oven to 350˚F. This step is crucial for even cooking and getting that lovely golden top.
  2. In a large bowl, mix together chicken broth, rice, cream cheese, green chiles, garlic powder, cumin, salt, and pepper until everything is well combined. Look for a creamy consistency where the cream cheese is fully melted and integrated.
  3. Spread the mixture evenly into a large casserole dish, making sure to cover the bottom. This will be the base where the chicken will rest.
  4. Lay the chicken breasts evenly spaced on top of the rice mixture. Gently press them into the mixture so they absorb the flavors as they cook.
  5. Cover the top of the casserole with the monterey jack cheese. Make sure to spread it evenly to ensure every bite has cheesy goodness.
  6. Carefully place the casserole dish in the preheated oven on the middle rack. Bake for 40 to 50 minutes or until the chicken is cooked through and reaches an internal temperature of 165˚F.
  7. Once it's done, remove the casserole from the oven. Let it sit for a few minutes to cool slightly. The smell will be heavenly, and you’ll be eager to dig in!
  8. To serve, you can either keep the chicken breasts whole or shred the chicken into the rice for a more mixed dish. Either way, it’s going to be delicious!
