Ingredients
  

  • 1 pound shredded chicken breast
  • 2 pieces green onions, thinly sliced, just the green part
  • 1/2 cup fat-free Greek yogurt
  • 1/4 cup diced dried apricots
  • 1/4 cup raisins
  • 2 tablespoons Major Grey’s chutney
  • 1 tablespoon curry powder
  • 1 tablespoon minced shallots
  • 1/2 teaspoon Kosher salt
  • To serve: toasted bread or lettuce cups

Method
 

  1. In a large bowl add your shredded chicken breast. Then stir in the Greek yogurt until it's combined. Next, add the dried apricots and raisins, mixing well. Sprinkle in the curry powder and chutney, and stir until everything is well-distributed. Toss in the green onions and minced shallots, and mix again. Season with Kosher salt to taste. Allow the salad to sit for a few minutes to develop the flavors. Serve on toasted bread or in lettuce cups, and enjoy!
