Ingredients
  

  • 1 pound ground chicken
  • cup breadcrumbs
  • 1 large egg
  • 1 tablespoon lemon juice from ½ lemon
  • 3 cloves garlic minced
  • ¼ cup finely chopped onion
  • ¼ cup chopped fresh parsley
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon dried oregano
  • ½ teaspoon dried dill
  • ¼ teaspoon ground black pepper

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine all of the ingredients: ground chicken, breadcrumbs, egg, lemon juice, garlic, onion, parsley, olive oil, salt, oregano, dill, and black pepper. Mix well until everything is evenly combined.
  3. Form the mixture into 24 to 28 evenly-sized meatballs, about 1 to 1.5 inches in diameter.
  4. Place the meatballs on a lined baking sheet, ensuring they are spaced out properly.
  5. Bake the meatballs in the preheated oven for 22 to 25 minutes until lightly browned on the outside.
  6. Once done, remove the meatballs from the oven and let them cool for a few minutes.
