- Start by warming olive oil in a 10-inch sauté pan over medium heat. You’ll know it’s ready when you see it shimmer. This is where our flavor journey begins.
- Add the finely chopped onion to the pan. Sauté it for about 1 minute, stirring occasionally. You want it to become soft and translucent, which usually takes around 4 minutes. The sweet aroma will start to fill your kitchen.
- Next, introduce the minced garlic and a pinch of red pepper flake to the pan. Keep stirring until the onion is soft and the mixture is fragrant. This step brings depth to your sauce.
- Pour in the crushed tomato along with the dried oregano, sugar, and season generously with Kosher salt and freshly ground black pepper. Stir it all together, and let it come to a boil.
- Once boiling, reduce the heat to low and let it simmer, partially covered, for about 30 minutes. This is where the flavors meld together beautifully. Stir occasionally and watch it thicken.
- After 30 minutes, stir in the chopped parsley and basil. Taste your sauce and adjust the seasoning if necessary. This is the point where you make it your own!
- While your sauce is simmering, bring a large pot of salted water to a boil. Once boiling, add the package of gnocchi and cook according to the package instructions. This usually doesn’t take long, just a few minutes until they float to the top.
- Drain the gnocchi and carefully transfer them to the pan with the tomato sauce. Gently stir to coat them well, ensuring every piece gets that delicious sauce.
- Now for the best part: top the dish with torn pieces of Mozzarella and a dusting of Parmesan cheese. This will melt beautifully in the next step.
- Place the pan under a broiler set to high, and cook for about 5 to 7 minutes. Keep an eye on it until the cheese is melted and crispy in spots. This adds a lovely texture.
- Once done, take the pan out of the oven and fold the melty cheese into the gnocchi. Sprinkle with additional parsley and basil before serving immediately.
