  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breast diced
  • 1/4 cup Greek yogurt
  • 2 teaspoons garam masala
  • 2 tablespoons olive oil divided
  • 3 cloves garlic minced
  • 1 teaspoon grated ginger
  • 1/4-1/2 teaspoon crushed red pepper
  • 1 14.5 ounce fire roasted diced tomatoes
  • 2 tablespoons heavy cream
  • 1/2 cup shredded cheese
  • 1/4 cup minced cilantro

Method
 

  1. First, make the dough. Using a stand mixer with a paddle attachment, combine the Pamela's Pizza Crust Mix, active dry yeast, very warm water, and olive oil. Mix on medium for 15 to 30 seconds until the dough is fully combined; it should look sticky.
  2. Next, scrape down the dough into a ball, lightly oil the top, and cover it with plastic wrap. Let it rise for about 1 to 2 hours, or until it doubles in size. This step is essential for a light and airy crust!
  3. Once risen, preheat your oven to 475 degrees Fahrenheit and prepare two baking sheets by lining them with parchment paper dusted with gluten-free powder.
  4. After that, divide the dough in half and place each half onto the prepared baking sheets. Lightly dust the tops and pat the dough into 10-inch rounds. If your hands get sticky, sprinkle a bit more gluten-free flour on top to help with handling.
  5. Now, pre-bake the dough by placing it in the oven for 8 to 10 minutes until you see a hint of brown around the edges. This step ensures your crust stays firm when you add the toppings later!
  6. While the crust is baking, let’s make the chicken tikka masala. In a medium mixing bowl, combine the diced chicken, Greek yogurt, and garam masala. Allow it to marinate for at least 1 hour. This marination is key to infusing flavor into the chicken.
  7. After marination, add 1 tablespoon of olive oil to a skillet set over medium-high heat. Once the oil is hot, add the marinated chicken and sauté until it’s no longer pink. If needed, add another tablespoon of olive oil along with the garlic, ginger, and crushed red pepper. Cook for about 30 seconds until fragrant.
  8. Next, pour in the fire roasted diced tomatoes and gently simmer the mixture for about 5 minutes. This step allows the tomatoes to absorb all the wonderful spices.
  9. After that, stir in heavy cream and let it simmer for another 5 minutes. You want the sauce to be thick enough to cover the pizza without being runny.
  10. Now, it’s time to assemble your pizza! Remove the pre-baked crust from the oven and top each crust with the desired amount of chicken tikka masala. Don't add too much sauce to avoid a soggy pizza!
  11. Sprinkle shredded cheese on top, then return the pizza to the oven for a few minutes until the cheese is melted and bubbly.
