- In a large bowl, combine all-purpose flour, whole wheat flour, brown sugar, baking powder, ground ginger, cinnamon, nutmeg, baking soda, and salt. Whisk these dry ingredients together until evenly mixed. The spices should create a lovely fragrant mixture, and the color should be pleasantly warm.
- In a separate bowl, whisk together eggs, non-fat buttermilk, and unsweetened applesauce. Mix until well combined. The mixture should be smooth and creamy, indicating that the ingredients are well integrated.
