Ingredients
  

  • 24 oz ribeye steak about 2 large steaks
  • 1/4 cup extra virgin olive oil
  • 20 cloves garlic divided, 15 cloves and 5 cloves
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp parsley chopped

Method
 

  1. Begin by pouring the olive oil into a medium skillet, then add about 15 cloves of garlic. Cook over low heat for about 20 minutes, stirring every 5 minutes to ensure the garlic doesn’t burn. You want it to become soft and golden brown, which adds a depth of flavor to the oil.
  2. While the garlic is cooking, take your ribeye steak and cut it into 1-inch pieces, trimming any excess fat. This step is crucial for ensuring each piece is tender and well-seasoned. Season the steak evenly with salt and pepper for flavor.
  3. Once the garlic is ready, remove it from the pan and drain it, reserving the oil. This oil will be the foundation for cooking the steak, so don't throw it away!
  4. Heat one tablespoon of the reserved olive oil back into the skillet over high heat. Once hot, carefully add the seasoned steak in a single layer. If your skillet isn’t large enough to fit all the pieces at once, cook the steak in batches to avoid overcrowding.
  5. Let the steak cook undisturbed for about 2 minutes. This allows a nice sear to form. Flip the steak pieces over and cook for an additional minute.
  6. Now, stir in the remaining pressed garlic and continue to cook while stirring for 1 more minute. This step is vital as it allows the garlic flavor to infuse into the steak.
  7. Remove the skillet from the heat and toss the cooked steak with the chopped parsley. The freshness of the parsley complements the rich flavors beautifully.
