Preheat your oven to 375°F. Getting that temperature right is crucial for achieving crispy fries. A hot oven will ensure they cook evenly and develop a beautiful color.
While the oven is heating, prepare your potatoes. Cut them into ⅛" strips, ensuring they’re all roughly the same size. This helps them cook evenly. If you have a mandoline slicer, it’s great for this task!
In a large bowl, toss the cut potatoes with olive oil, melted butter, salt, pepper, thyme, and half of the Parmesan cheese. Make sure every fry is evenly coated with the mixture; this will enhance the flavor and help them crisp up.
Line a baking pan with parchment paper for easy clean-up. Spread the fries out in a single layer on the pan. Avoid overcrowding them; if they’re too close, they’ll steam instead of crisp.
Place the pan in the oven and bake for 12 minutes. This initial bake helps start the cooking process. You’ll want to keep an eye on them to ensure they’re not browning too quickly.
After 12 minutes, remove the pan from the oven. Use a spatula to carefully flip all of the wedges over. This step is important for even cooking; you want both sides to be golden and crispy.
Return the pan to the oven and roast for another 12 minutes. Check for doneness; they should start to look golden brown at this point.
Remove the fries again and flip them over once more. This time, add in the minced garlic. The garlic will infuse the fries with a beautiful flavor, but keep an eye on them; garlic can burn quickly!
Roast for an additional 8 to 10 minutes. Keep checking until the fries are crispy and the garlic is fragrant but not burnt. You’ll know they’re done when they have a gorgeous golden hue.
Once they’re done, take them out of the oven and sprinkle the remaining Parmesan cheese and chopped parsley on top. Let them sit for a minute before serving. Trust me; this step makes them even more delicious!
Serve hot with your favorite dipping sauces. They’re best enjoyed fresh out of the oven, but be prepared for everyone to want seconds!
