Preheat your oven to 400°F (about 204°C) and line a baking sheet with parchment paper.
In a large bowl, combine the chicken wings, vegetable oil, garlic powder, herbes de Provence, and kosher salt. Use tongs to toss the wings until they are evenly coated.
Spread the wings out evenly on the prepared baking sheet.
Place the wings in the oven and bake for 15 minutes.
After 15 minutes, remove the baking sheet from the oven. Use metal tongs to carefully flip each wing.
Return the wings to the oven and bake for an additional 15 minutes.
While the wings are baking, melt the unsalted butter in a small pot over medium-high heat.
Once melted, add the minced garlic and the additional herbes de Provence. Cook for about 30 seconds.
Next, add the honey to the pot and stir until smooth and combined.
Once the wings are fully cooked and have reached an internal temperature of 165°F, remove them from the oven. Change the oven setting to broil.
Flip all the wings skin-side up and brush them generously with the prepared glaze.
Broil the wings for 2 to 4 minutes, watching closely until they are crispy.
Serve immediately, topped with chopped fresh herbs.
