Ingredients
  

  • 1 large egg
  • 1 tablespoon olive oil
  • 1 clove garlic crushed (or 1 teaspoon garlic powder)
  • 1 teaspoon sweet paprika
  • 1/4 cup fresh parsley finely chopped
  • 1 pinch Sea salt
  • 1 lbs skinless chicken breast fillets or thighs if you prefer, cut into strips
  • 3/4 cup panko crumbs
  • 1/4 cup multigrain/whole wheat breadcrumbs
  • 2 tablespoons fresh grated Parmesan cheese
  • 3 tablespoons reduced-fat/light whole egg mayonnaise or Greek yogurt for a healthier version
  • 3 tablespoons sweet chilli sauce
  • 1/2 medium lemon squeezed of juice (optional)

Method
 

  1. Preheat your oven to 200℃ (390℉). Lightly grease a baking tray with cooking oil and wipe it down with a paper towel. This prevents the chicken from sticking, ensuring a perfect bake. You might want to use two trays if you have a lot of chicken strips!
  2. In a medium-sized bowl, whisk together the egg, olive oil, garlic, paprika, and sea salt. Make sure everything is well combined. The mixture should be smooth and set aside for coating the chicken.
  3. Take your chicken breast fillets and cut them into strips. Add them to the egg mixture, making sure each piece is thoroughly coated. You want to ensure that the chicken is evenly covered so that the breadcrumbs will stick.
  4. On a separate plate, pour out the panko crumbs, multigrain breadcrumbs, and Parmesan cheese. Mix them lightly to combine. This will create a deliciously crunchy coating for your chicken strips.
  5. Now, take each piece of coated chicken and dip it into the breadcrumb mixture. Make sure to coat each piece thoroughly, pressing the crumbs onto the chicken to stick well. Once coated, place the chicken strips onto the greased baking tray, ensuring they are spaced apart.
  6. Once all the chicken strips are coated, lightly spray them with cooking oil spray. This will help them crisp up beautifully in the oven.
  7. Place the baking tray in the preheated oven and bake for 15 to 20 minutes. Make sure to turn the chicken strips halfway through cooking. You're looking for a golden color and cooked-through texture.
  8. While the chicken strips are baking, prepare your dipping sauce. In a bowl, combine the mayonnaise (or Greek yogurt) and sweet chili sauce. Mix well until you achieve a smooth consistency. This will be the perfect complement to your strips!
  9. Once the chicken is golden brown and cooked through, remove them from the oven and let them cool slightly. This allows the crust to set perfectly.
  10. Finally, serve your crispy Garlic Chicken Strips with the sweet chili mayo and a wedge of lemon for squeezing. Enjoy your delicious creation!
