Ingredients
  

  • 1 stick Salted Butter
  • 6 cloves Garlic
  • 2 breasts Chicken (skinless & boneless)
  • 2 teaspoons Garlic Powder
  • Salt and Pepper
  • 2 tablespoons Olive Oil
  • 12 oz Long Pasta
  • 1 tablespoon Salt
  • 1 tablespoon Chopped Fresh Parsley

Method
 

  1. Melt the stick of butter over a low heat in a small pan.
  2. Peel and chop the garlic finely.
  3. Add the chopped garlic to the melted butter and cook it over a very low heat.
  4. Place the chicken breasts on a chopping board and cover them with a piece of baking paper.
  5. Use a meat mallet to flatten the chicken until it is about half an inch thick.
  6. Season the chicken breasts with salt, pepper, and garlic powder.
  7. Heat the olive oil in a skillet.
  8. Once hot, sear the chicken for about 2 minutes on each side until just cooked through.
  9. While the chicken cooks, bring a large pot of water to a boil.
  10. Add 1 tablespoon of salt and the pasta to the boiling water.
  11. Cook the pasta until al dente.
  12. Reserve a cup of the pasta cooking water, then drain the pasta.
  13. Pour half of the garlic butter over the pasta and stir.
  14. Slice the cooked chicken and serve alongside the pasta.
