Ingredients
  

  • 8 oz Rice Noodles A Taste of Thai Rice Noodles in Linguine, Vermicelli, or Slim Cut
  • 1.5 cups Frozen Vegetable Mix Birds Eye brand
  • 2 packets Asian Sauce Packets Birds Eye brand
  • ¾ cups Water
  • 1 tsp Sesame Seeds
  • 1 bunch Cilantro Fresh

Method
 

  1. Start by bringing a pot of water to a boil. Once it’s bubbling away, add the Rice Noodles and cook them according to the package instructions until they’re al dente. This usually takes around 4 to 6 minutes. When done, strain the noodles and set them aside for later.
  2. Next, in a medium pan set over medium heat, add the frozen Vegetable Mix along with ¼ cup of water. Cover the pan and allow the vegetables to steam for about 2 minutes. This step helps to soften them and enhances their natural flavors.
  3. After the water has evaporated and the veggies are tender, remove the lid and add one Asian Sauce Packet to the pan along with another ¼ cup of water. Stir the mixture gently to combine, ensuring that the vegetables are well-coated in the sauce.
  4. As the vegetables simmer in the sauce, you may notice it thickening slightly. This is the perfect time to add an additional ¼ cup of water and the second Asian Sauce Packet. Stir everything together and allow it to bubble for a minute or two.
  5. Now, it’s time to bring in the star of the dish! Add the cooked Rice Noodles to the pan and gently toss everything together. Make sure the noodles are well coated in the sauce; this will take around 10 to 20 seconds.
  6. Once everything is combined and heated through, turn off the heat. Serve the stir fry hot on a plate, and don’t forget to garnish with Sesame Seeds and fresh Cilantro. The aroma will be irresistible!
