Ingredients
  

  • 250 g Cooked spaghetti or other pasta shapes
  • 150 g Mozzarella or goat cheese
  • 5 large Large eggs
  • 225 g Fresh spinach leaves
  • 170 g Cherry tomatoes
  • 1 bunch Chopped fresh basil and mint
  • 150 g Peas
  • 3 pieces Spring onions
  • 2 tablespoons Extra virgin olive oil

Method
 

  1. Preheat your oven to 190°C/390°F.
  2. In a large bowl, combine the cooked pasta with the beaten eggs. Mix thoroughly.
  3. Add the cubed mozzarella cheese, fresh spinach leaves, sliced cherry tomatoes, cooked peas, and chopped herbs. Season with salt and pepper.
  4. Brush a medium-sized oven-safe skillet with extra virgin olive oil.
  5. Pour the spaghetti mixture into the skillet, ensuring it’s evenly distributed.
  6. Cook on medium heat for about 5 minutes until the edges are firm but the center is still runny.
  7. Transfer the skillet to the oven and bake for about 10 minutes until the center is set and the top is golden brown.
  8. Let it cool for a few minutes before serving warm or at room temperature.
