  • 1/2 cup Water
  • 2 cups Strawberries hulled and quartered or halved depending on size
  • 4 units Kiwi fruit peeled and sliced
  • 4 units Oranges peeled and sliced
  • 1/2 cup Dried goji berries
  • Basil fresh, or mint leaves; for garnish (optional)

  1. 1. Start by preparing the basil syrup. In a small pot over medium heat, combine 1/4 cup of basil leaves, 1/4 cup of coconut palm sugar, and 1/2 cup of water. Stir the mixture to dissolve the sugar.
  2. 2. As the mixture comes to a boil, pay attention to the bubbles forming on the surface. Once boiling, reduce the heat to low and let it simmer. This step is crucial; you want to watch for a syrupy consistency to develop. It will take about 10 to 15 minutes.
  3. 3. After the syrup has thickened, remove it from the heat. Discard the basil leaves, then transfer the syrup to a small bowl or jar. Allow it to cool to room temperature. Make sure to refrigerate it if you're not using it immediately.
  4. 4. Next, it’s time to prepare the goji berries. In a small bowl, mix 1/2 cup of dried goji berries with 3 tablespoons of the basil syrup and 3 tablespoons of water. This will hydrate and soften the berries, enhancing their flavor.
